Macaroni with Sausage and Zucchini

Macaroni with Sausage and Zucchini

Prep Time: 5 minutes | Cook Time: 60 minutes

Serves 4-6 

Macaroni with Sausage and Zucchini is a perfect recipe for quick weeknight dinners made from things usually found around the house. (Especially if you’re Italian!)

Ingredients:

1 Tbsp. olive oil

5 Italian sausage links, hot or mild

1 Clove of garlic, chopped

1 large (28-oz.) can of crushed tomatoes

1 Tsp. dried oregano

1 Tbsp. dried parsley

Salt and pepper, to taste

3-4 Small zucchinis, sliced

1 Lb. macaroni, any kind works

Parmesan cheese, to garnish

When the kids are asking “What’s for dinner” and you realize you forgot to make a plan, this is the recipe for you. Sometimes, we don’t have the energy to get creative and cook up some fantastic meal. Sometimes, we need something quick and easy that satisfies us. 

This recipe is perfect for those moments. Especially if you’re Italian, you’ll probably always have these ingredients in the house. And if you’re not Italian, you’ll probably only need to pick up a few things to get squared away. 

So, let’s make an easy weeknight dinner! Just throw together the ingredients like the directions below say, and you’ll have a feast fit for a king. 

Cooking Directions: 

  1. Add olive oil and sausage to a frying pan and brown well. Remove sausages from the pan. 
  2. Add garlic to the pan, cook gently for 2 minutes. Continue to stir to make sure it doesn’t get burned. 
  3. Add crushed red tomatoes, parsley, oregano, salt, and pepper. 
  4. Return sausages to the pan. 
  5. Bring to a light boil and then reduce to a simmer. 
  6. Add zucchini to the top of the sauce and simmer, covered for 45 minutes. 
  7. While the sauce is simmering, cook pasta to al dente and set aside. 
  8. Once the sauce is done, serve mixed well with the cooked macaroni. 
  9. Sprinkle with parmesan cheese as you like. 

Notes from the Kitchen: 

  • For less fat, use turkey sausage. (Remember, sometimes a little fat is a good thing!)
